I know it can be a dangerous place, but I got to Trader Joe’s and the 888 International Market every week. Don’t get me wrong, it’s not a geographically dangerous place – it’s a financially dangerous place because I want ALL.OF.THE.THINGS when I visit either of those shops.  Real talk, I no longer allow myself certain items due to massive  nosh fests, but I digress.  This post is not about my gluttony, it’s about…

What’s On My Japanese Sweet Potato, Homie:

  • Trader Joe’s soy chorizo (6 oz served 2 vertically challenged, adult sized, humans)
  • Pinto beans (canned)
  • Green onions (chopped)
  • Cilantro
  • Jalapeno (optional)
  • Lime juice
  • (not pictured, because the tween ate it) Trader Joe’s vegan mozzarella style shreds

Now, you know I do hacks, not recipes, so here’s a vague rundown of what to do to recreate this…

Preheat your broiler (if you’re using vegan cheese) and pop that sweet potato in the microwave for about 5 minutes.  Meanwhile, cook the chorizo, pinto beans, and green onions on medium on your stovetop.  By the time your potato comes out, your chorizo mixture should be heated through.  Cut the potato in half, then split that half to make a nice flat bed for your chorizo mixture.  (If you’re using vegan cheese, now is when you add that, throw it under the broiler and DO NOT scroll through Instagram.  You’ll burn your cheezy fo’ sheezy!  It’ll melt quickly, so keep your eye on it.)  Top with cilantro (and jalapeno if you like) and squeeze a lil’ lime over that bad boy!  So yummy!
