Ever since (is that grammatically correct?  If you know me, you know I’m going to look it up) I converted Bean to a vegan diet, we’ve had a tradition of me making us waffles after teaching my Saturday PiYo Express class (I know… I’m a model fitness instructor 🤣).

Well, today we were scheduled to walk in the Johnson County Parade with our NLCC family (as we do every year), so Bean and I were slightly bummed that the old tradition would postpone or cancel the new tradition… but God!

Yes, our heavenly father sent His rains down and the parade was canceled!  I’m not saying He did it just so Bean and I would have waffles, as normally scheduled, but I’m not saying He didn’t either. 😏

* If you’ve never made waffle/pancake batter, don’t attempt this hack.  You need a frame of reference since I don’t measure anything and consequently can’t provide measurements.  I would estimate: 1 tsp of chia, 2 TBS of flax, 1 C oats, 1 C flour, 1/2 tsp vanilla extract, 1/4 tsp butter extract, 2/3 C blueberries, and enough cold water to make the batter look like runny pancake batter.  You can always add more flour if you think it’s too runny.
